| No-bake gluten-free cookie drops. |
{Ingredients}
- 1/4 Tropical Traditions Organic Coconut Oil
- 1/2 cup honey
- 1/4 cup cocoa powder
- 1/2 cup peanut butter
- 1 1/2 cups dried shredded coconut
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
{Method}
- Combine coconut oil, honey, cocoa powder and cinnamon in a saucepan
- Boil for 3 minutes
- Remove from heat and stir in peanut butter, coconut and vanilla
- Drop by spoonfuls onto wax paper
- Place in freezer for one hour
- Keep refrigerated
- Makes a dozen large drops
