Sun-Dried Tomato Vegetarian Pasta #Recipe

{Ingredients}
  • pasta
  • sun-dried tomato pesto (one bottle)
  • snow peas (leave whole)
  • green pepper
  • red pepper
  • mushrooms
  • garlic
  • water chestnuts (sliced)
  • Parmesan cheese

{Instructions}
  • Chop peppers, mushrooms and garlic
  • Saute all vegetables and water chestnuts
  • Stir in a tablespoon of sun-dried tomato pesto
  • Cook pasta of your choice (I used spaghetti.)
  • Coat cooked pasta with the remainder of the bottle of pesto
  • Top pasta with vegetables
  • Sprinkle with Parmesan and serve

  7. THis looks very yummy, but sadly we are a gluten-free home and don't eat pasta. I sure do miss it though! Might be good over spaghetti squash I am thinking. THanks for linking up with Wellness Wednesday!
