{Ingredients}
- pasta
- sun-dried tomato pesto (one bottle)
- snow peas (leave whole)
- green pepper
- red pepper
- mushrooms
- garlic
- water chestnuts (sliced)
- Parmesan cheese
{Instructions}
- Chop peppers, mushrooms and garlic
- Saute all vegetables and water chestnuts
- Stir in a tablespoon of sun-dried tomato pesto
- Cook pasta of your choice (I used spaghetti.)
- Coat cooked pasta with the remainder of the bottle of pesto
- Top pasta with vegetables
- Sprinkle with Parmesan and serve

ReplyDeleteTHis looks very yummy, but sadly we are a gluten-free home and don't eat pasta. I sure do miss it though! Might be good over spaghetti squash I am thinking. THanks for linking up with Wellness Wednesday!
