Pineapple Coconut Squares #Recipe

{Ingredients}
  • 1 cup flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup butter
  • 1/4 cup melted butter
  • 2 eggs
  • 1 tbsp milk
  • 1 cup coconut
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 can crushed pineapple

{Method}
  • Sift flour, baking powder and salt together 
  • Mix in butter, milk and ONE beaten egg
  • Press into a greased 8 x 8 inch pan
  • Drain the pineapple and spread over bottom layer
  • Beat together the remaining egg, melted butter, sugar, coconut and vanilla
  • Pour over pineapple layer
  • Bake in preheated 350° oven for 45 minutes
