{Ingredients}
- 1 cup flour
- 1 tsp baking powder
- 1/8 tsp salt
- 1/2 cup butter
- 1/4 cup melted butter
- 2 eggs
- 1 tbsp milk
- 1 cup coconut
- 1 cup sugar
- 1 tsp vanilla
- 1 can crushed pineapple
{Method}
- Sift flour, baking powder and salt together
- Mix in butter, milk and ONE beaten egg
- Press into a greased 8 x 8 inch pan
- Drain the pineapple and spread over bottom layer
- Beat together the remaining egg, melted butter, sugar, coconut and vanilla
- Pour over pineapple layer
- Bake in preheated 350° oven for 45 minutes
